Brownies are a Staple

This weekend was the Super Bowl, which meant I needed to bake a delicious treat for the game. There are too many options, but I turned to Mary Berry's Baking Bible once again. I settled on the brownie recipe because I had all the ingredients in house.


A classic brownie recipe: all you need is sugar, flour, cocoa powder, eggs, butter and vanilla. I did my best to follow Mary Berry's recommendations for how to prepare your baking dish with parchment paper. Typically, I just get a big enough section and lay it in the dish. This time I measured the bottom and sides and had separate pieces for them. I did not like this method and will stick to my usual way of doing it.


Measure all your ingredients into one bowl, mix well. I used my hand mixer. Make sure you have softened butter not melted. Once everything is mixed well, spoon into your dish and spread out levelly. I have to say this was quite difficult. The batter was thicker than I remember brownies to be. The spreading out was the most difficult of the whole process. This recipe also called for chocolate chips, which were mixed in the batter. I added some on top as well.


We were going to eat these during the game, so I stuck the prepared dish into the fridge until it was baking time. Who doesn’t want warm brownies? When it was dessert time, I took the batter out of the fridge to warm to room temperature while the oven pre-heated. I baked them for 40 minutes, which may have been 5 minutes too long, but they turned out with a soft, slightly passed gooey center and a crisp but chewy edge. They were really quite good.


Brownies are my fall back. I could eat them all night long. I didn't but sure could. Unfortunately, I forgot to snap photos of this quick dessert, but it’s a standard brownie; I'm sure you can imagine them.
