The Perfect Kid Dessert

I unintentionally found a wonderful, easy kids birthday dessert recipe. Of course it comes from the Mary Berry Baking Bible. I was looking through the recipes thinking of what I already had in my cupboards to find a recipe I could bake this week. I asked Andy look through the Mary Berry Baking Bible as well as he is my trusty taste tester.


Surprisingly, he picked a recipe that I had all the ingredients for, was not overly involved, and could be made right then. The recipe is on page 118. Cute, little butterfly cupcakes. It’s so simple, as most of the Mary Berry recipes have been, and the cute design was not complicated at all, for someone as unartistic as me, I could make these look cute.


All you need for cute factor is a little food coloring in the frosting, and there you go! Great children's birthday dessert. The recipe makes 12 cupcakes. The batter was lacking for 12 full cupcakes, but I’m used to making ginormous muffins for the farmer's market, so I may have a misconception of appropriate size.


Combine all the ingredients together in a bowl; you probably have all of them in your cupboard right now. Fill the cupcake tins and bake for 15-18 minutes or until golden :).

Let them cool. While they are cooling, mix together butter and powdered sugar for the buttercream. I added a tablespoon of milk to make the buttercream smoother. I could have halved the frosting as I had quite a bit leftover! Mary Berry's recipe says to swirl some on top of the cupcake not to cover it; I covered the tops, and I still had a quarter of the frosting leftover.




When you’re ready to frost, cut off the top of the cupcake. I know it seems weird, and I could not picture it when I read the recipe, but it works! Cut the top in half and use it to make the wings for the butterfly. Now, where the cupcake is cut off, cover with frosting. Or in my case, cover the whole cupcake top with frosting, then stick your wings in! Easy peasy. Food coloring in the buttercream would take these cupcakes to the next level for a kids party or a fun, spring dessert. You could also add cocoa powder to make chocolate cupcakes, or fill the cupcakes with jam or a filling of your choice!




After a few recent baking fails, I was very happy these turned out! Frustration in the kitchen was real for me the last few weeks. After a couple successes, I'm now ready to dive back in.
